
One of my favourite things to eat while we are out shopping is a veggie loaded rice bowl that can be easily found everywhere! I just love those stir-fry, veggie bowl type meals a lot, I really don't know why - maybe because there is so much variety packed in a bowl? For 2016, however, one of our family goals is to be more responsible with what we put in our bodies and, so, we are trying to not eat a whole lot of fast food. So why not attempt to make a healthier version of the things we love at home?
The Veggie Bowl.
I started off by making some rice in a pot and frying up the chickpeas in a saucepan until they were golden brown, tossing them lightly with a little bit of oil, salt, and pepper. While everything was cooking, I took some corn, broccoli and carrots and I baked them in the over at 350 degrees for 40 minutes, stirring half way through.





I cannot wait to make it again, however, I would definitely try using avocado, lime juice, and cilantro to make it taste even better! Bug ate her entire bowl full, eating all of the big veggies first, and ending with her rice and chickpeas. If I were to make this for my Husband, I would leave out the chickpeas and add chicken! mmm.
