Strawberry Rhubarb Crisp

Yesterday was the perfect weather for baking, in my opinion. It rained almost all day and was very cold. There is nothing better than turning on the oven to help warm up the house as well as to bake something that would help warm up the belly.

I made chilli and mashed potatoes (comfort food, anyone?) last night for supper, which was good, but dessert was delicious. Strawberry Rhubarb Crisp. This family loves crisp and we were so happy to have had friends over last night to share it with them. (and very happy that there were still some for leftovers too! )
The recipe I used can be found here. The only thing that I would suggest (the reviews would agree with me on this as well) is to cut up more fruit than the recipe says. I had three cups of rhubarb and about 4 1/2-5 cups of strawberries, rather than the 3 that the recipe recommended. There was also a but more crumbly topping than needed, but I love topping, so I made sure that the crisp was covered entirely.
This was such a nice dessert to make on such a cold day. My house smelled yummy and was warm, win win win. I highly recommend serving this crisp with ice cream, and I hope that if your household doesn't have ice cream that you and your almost 2 year old doesn't have to walk in the rain to get it. However, if you do, I hope that you take a moment to enjoy it. The smells, the cool weather dripping on your face, the warmth and comfort you will get when you go back into the house and light some candles. Besides, the ice cream is for the crisp - totally worth it if you ask me!!
I hope you all enjoyed. Have a great day. xoxo
