This recipe was one of our favourites last year. I was so pleased when I accidentally stumbled upon it on my computer a couple weeks ago. Although I have no pictures to add to the recipe, I assure you, these cookies were absolutely delicious. A definite winner. A great treat after shovelling the snow, going for a toboggan ride, or singing some carols. Eat them by the fireplace with a cup of tea in hand.
THUMBPRINT COOKIES
Ingredients
2 1/2 C. flour1/2 tsp baking powder
1 C. butter
3/4 C. sugar
1 egg
1 tsp vanilla
1 C. Jam
Preheat oven to 300F. In large bowl combine flour and baking powder. Set aside. In medium bowl combine butter and sugar, mix well. Add egg and vanilla. Stir, stir, stir. Add flour to the butter mixture. Mix, mix, mix. Roll dough into 1 inch balls and place on parchment that is on a cookie sheet. Poke a hole in the middle of each ball. Add about 1/2 tsp of jam to each hole. Bake 22-24 minutes and then transfer onto a cooling rack.
