Pumpkin Pie Recipe

Some people like apple pie. (me) Some people like strawberry rhubarb pie. (me) Some people even like banana cream pie. (me) My husband likes pumpkin pie. (not me nope nope nope) and for some reason it feels like the rest of the world agrees that pumpkin pie is THE holiday pie. So without further ado, a recipe for the surprisingly wanted pumpkin pie filling to make your homes smell like Christmas (I have to admit it does smell like Christmas)

Pumpkin Pie.

1 1/4 cup pumpkin (fresh or canned)
3/4 cup sugar
1 1/2 tsp salt
1/4 tsp nutmeg
1 tsp cinnamon
1 tsp flour
2 eggs, beaten
1 cup evaporated milk
2 Tbsp water
1/2 tsp vanilla

Combine the first six ingredients. Beat in eggs. Add the rest. Mix well. Pour into the pie shell. Bake at 400F for 15 minutes, then lower temperature to 350 and continue baking for 35 minutes. AND SERVE.

Serve with whip cream or icecream. If you are anything like my husband you will have more whipping cream than pie. And if you are anything like me, just indulge in a big bowl of ice cream. Merry Christmas.
