Chocolate Peanut Butter Cups Recipe

Another sweet treasure I found on my computer. I love technology sometimes. A place to store so many sweet and wonderful things. These Peanut Butter Cups are one of our favourite and even though it doesn't scream Christmas, I love making them during this season. My apologizes again for having no photographs for this post.

Chocolate Peanut Butter Cups
Makes 12

8 ounces semi-sweet chocolate, chopped
1 Tbsp butter at room temperature
1/4 cup smooth peanut butter
1/2 cup honey

Place twelve baking liners on a baking sheet. Melt the chocolate (in a double boiler if you have one, I just used the Microwave) Place about two teaspoons of melted chocolate into each baking liner. Swirl it around so that the chocolate coats halfway up the side of the liner. Repeat with them all. Refrigerate until set. Using an electric beater, beat butter until fluffy. Beat in the peanut butter and honey and mix well. Fill the chocolate  cups with butter mixture till it is about three-quarters full and smooth down the surface. Refrigerate for fifteen minutes. Top off with more melted chocolate so that it enclose. Smooth the mixture. Refrigerate until hardened. Remove liners and serve.

I recommend making tons and freezing what you don't eat right away. So good. So worth it. Imagine accidentally forgetting a package and then discovering them in April. Talk about LOVE! They are a little finicky but a must to add to your season baking. Merry Christmas.
